Vegan Chocolate Chunk Oatmeal Cookies

I used to make these cookies the conventional way, with butter and eggs. I made them Friday using Earth Balance and flax eggs. So delicious! I didn't use dried cherries but next time I will. Everybody loves these cookies. I tested them out on many "conventional cookie eaters" over the weekend and they were a big hit!
